So I followed the instructions perfectly, minus the paprika. My 2 year old doesn't like much spice so I sprinkled the chicken with Italian chicken seasoning instead.
My oven is currently out of commission, so I kept the chicken in a Dutch oven type pot, and simmered it on the stove covered, rather than put it in the oven for the last step.

I loved this chicken dish! Very flavorful and I loved the paprika and spinach. My chicken cooked in the sauce and didn't need 30 minutes in the oven.
I cooked it on the stovetop and served with brown rice and broccoli. I coated the chicken with flour before cooking because it helps the sauce stick better.
This is a great recipe, will make again. I'm in the midst of cooking this now and the house smells so divine! It's in the oven now I figured if the sauce is too runny I'll put some of the sauce in a cup, mix in a little cornstarch and hopefully that'll thicken it up!
Oh, this was delicious! Rave reviews all around. Husband said it was restaurant-quality, and that is a huge compliment. I did not have garlic so I used some chopped onion, and I used a whole cup of cream.
Served over rice and lapped up the extra sauce with some bread. What a surprise how all of the flavors came together. I'll play with ways to take the calories down from the cream now that I know coconut options have worked for some.

While this is a very tasty dish I just made for the first time I would recommend either wine OR lemon juice I used both and the dish was too acidic.

I'm making it tonight for the second time. Last time I made this chicken, I ate it all week and then wanted to make it again immediately--which never happens!
I've had no trouble getting the sauce to thicken when I add the wine and lemon juice before the broth and cream. I'm adding more spinach this time and won't let the spinach cook as long on the stove.

This was so good. Thank you so much for posting. There are a lot of comments on this recipe and I'll admit I only read about half but I'm going to throw my two cents in.
The first time I made this it was a disaster. I also had the issue of clumped, rubbery, overcooked cheese. There's so much emphasis on thickening the sauce which lead to overcooking and I don't know why you would bake it after it's already cooked.
I made a few changes the second time and it turned out a lot better. I doubled the butter to 6 Tablespoons divided.
Used 2 lemons instead of 1. Waited to add the parmesan and spinach until after I took it off the heat I read having the heat too high as well as high acidity can cause clumpy cheese.
I also used an entire package of spinach rather than just 2 cups. I didn't worry about thickening the sauce at all and just poured it all over Basmati rice which soaked up the juices really nicely.
I made this and a ton of Basmati for a potluck at my school and then took the leftovers to work 2 hrs later and it was totally demolished.

This chicken is amazing! I also had trouble getting the sauce to thicken so near the end of cooking time I added a very small amount of cornstarch slurry and some extra cheese.
I doubled the spinach and served with Lundberg's Wild Blend rice. Will make again for sure. Made this tonight for my family and it was delicious.
I used five chicken breasts instead and doubled the liquids to have more sauce for the angel hair pasta that I served it over. The flavor with the thyme is wonderful.
I made it today, for dinner. It's so easy to follow the recipe, and so delicious! I really recommend it. I prefer this chicken with more sauce, so I, double the ingredients to have more of it.
Also, I used Kale, instead spinach. One more thing, I cut the chicken breast, like an slice horizontally, it's more easy to cook and became so juice, also, I served it with basmati rice, and garden salad So happy that my husband really enjoy the dinner!

In the meantime you could use myfitnesspal to get that info on your own. BUT no matter what I do my sauce is thin and runny! How long should I be letting it simmer between steps?
Melanie, I am so sorry you are experiencing this. I need to play with this recipe more as I can't seem to get consistent results for my readers. I have made it several times and haven't had an issue, so I am going to make it a few more times this week to see if I can pin point what I am doing that isn't communicated well in the recipe.
Sorry I can't give you a better answer right now. I wish I would have read the comments first I ended up with 8 half breasts, so the sauce was a little bit sparse.

Rachel,I made this again tonight and added just a touch of cornstarch-water right at the end of the 7 minute simmer and the sauce thickened up beautifully.

You could try simmering it on the stove top, I have not made it that way so I do not know how long to say, but if you use a meat thermometer you could cook until the internal temp reaches , and in that case it would not matter if you used breasts, thighs, etc.

Some people do not like chicken reheated, but it does not bother me. I usually despise leftovers and I especially hate the way meat tastes reheated, but I can tolerate dishes that are covered in some kind of sauce or soup dishes.
I made this last night for dinner delicious and then reheated a serving for lunch today. No weird chicken taste at all and just as tasty as yesterday.
I always reheat my leftovers in the microwave with a wet paper towel over the top. It makes it taste better in my opinion. Morgan, thanks for answering!
And what a great tip with the wet paper towel, I will have to try it. I usually don't like trying recipes from blogs because a lot of people like to comment and give recipes a 5 star review based on the photo without actually trying it first and sometimes the recipes are gross.
This is my favorite recipe I've tried since I've been on a low carb diet and I have tried a lot. I will be making this dish frequently. The sauce didn't really thicken up, even with the tips provided, but it was still amazing ladled over some zoodles.
